Thanks to the skill and experience of our cheesemakers, we’ve been producing Parmigiano Reggiano for over a thousand years using the same traditional method.

Our Parmigiano Reggiano is characterized by a sweet and balanced taste in every phase of maturing, without losing that harmonious balance between the sweet and savory notes that makes it unmistakable.
It is during the ageing process that Parmigiano Reggiano acquires its characteristically grainy, flaky texture, becoming crumbly and soluble. Delicious, easily digestible, extremely nutritious, Parmigiano Reggiano is outstanding in every way. The unique flavour of a product free from additives and a high concentration of proteins, vitamins, calcium and mineral salts make it suitable for all ages and in all situations, providing a quick shot of energy everyone will love.
The Parmigiano Reggiano made in the Colline di Selvapiana e Canossa cheese factory has a soft paste with a straw-yellow colour, tending towards white, and the fragrance is still subtle due to the young age. Mildly aromatic on the palate, with slightly milky notes and a hint of grass and flowers. Ideal with meals, and very popular with consumers who prefer a less strong, persistent flavour.
After it has been aged for 18 months, our Parmigiano Reggiano has a fine, grainy texture, with a good number of tyrosine crystals, and an intense straw-yellow colour. Smooth and delicate on the palate, with a good balance of sweet and savoury notes; also clearly evident are nutty tones and a hint of stock.
At this stage of ageing, Parmigiano Reggiano casello 417 has a clearly marked aroma and flavour, with notes of citrus and nuts, as well as savoury notes tending towards a piquant flavour. The paste is intense in colour, with a texture that is crumbly yet still soft, characterised by the presence of tyrosine crystals. It is an ideal ingredient in the kitchen, to garnish first courses, adding a touch of unmistakable flavour.
Parmigiano Reggiano 30 months casello 417 has a distinctive flavour, strong yet perfectly balanced. When enjoyed in small pieces, it has an intensely creamy, milky aroma on the palate, with subtle floral notes and a distinct predominance of nutmeg and spices. Despite the lengthy ageing period, it maintains a perfect blend of sweet and piquant notes. The intensely fragrant paste has a more compact texture, without being too dry.
After being aged for 36 months, our Parmigiano Reggiano has a strong, distinct flavour. The paste is drier and more crumbly, for a full, aromatic flavour, with notes of toasted nuts and a hint of cloves. Particularly rich in nutritional elements, it is perfectly complemented by a few drops of Modena Balsamic Vinegar, or with honey and jams.
