What does organic mean? The Organic Parmigiano Reggiano production process must comply not only with the regulations established by the Consortium, but also with organic farming procedures regarding the following: the animals’ dietstock rearing and animal well-being and how milk is processed.

  • The fodder the animals are fed with comes exclusively from organic farming, which prohibits the use of chemical fertilizers, weedkillers, pesticides and insecticides, and is free from Genetically Modified Organisms.
  • The animals are raised on grass or in free spaces outdoors, and are housed in spacious, comfortable cattle sheds, and are treated according to the principles of homoeopathic medicine.
  • Organic milk is processed using preservative-free rennet. It is processed in boilers and in recipients reserved for organic production methods, separate from other production processes.

    Our Organic Parmigiano Reggiano aged for 18 months has a paste with a pale straw-yellow colour and a soft, elastic texture, with a fine grain and a moderate presence of tyrosine crystals. Predominantly sweet and delicate on the palate, thanks to the organic milk, with notes of fresh grass and hay and a hint of cream.

    24 months


    The Organic Parmigiano Reggiano of the Colline di Selvapiana e Canossa cheese factory, aged for 24 months, has a distinctly balanced flavour in which the savoury notes blend smoothly with the sweet notes. When enjoyed in small pieces, toasted notes come through, with a hint of nutmeg and spices, making this cheese perfect on its own for aperitifs or snacks, and excellent paired with seasonal fruit, walnuts or honey. The intense straw-yellow paste is characterised by a good number of tyrosine crystals.
