Our Parmigiano Reggiano
Parmigiano Reggiano’s origins go back a very long way. Made to this day using the age-old traditional method, this is a cheese with unique properties and an unmistakable flavour.
Every single day of the year, in the Colline di Selvapiana e Canossa mountain dairy, 70 wheels of Parmigiano Reggiano are produced. This unique product is the fruit of painstaking care and attention every step of the way. All the milk used to make the cheese comes from cattle raised on local farms and nourished with fodder grown on local land.
For every kilo of Parmigiano Reggiano, we use 16 litres of fresh milk from the farms on the hills of Canossa, just a few kilometres from the cheese factory. This king of cheeses is packed with nutritious proteins, vitamins, phosphorous and calcium. The natural ageing process makes Parmigiano Reggiano easy to digest and allows it to develop a range of extraordinarily complex aromas and flavours.
The “Colline di Selvapiana e Canossa” shop stocks cheese aged for three different lengths of time, 12, 24 and 36 months, available in three forms: hand-cut, wedges and flakes.
