The Dairy

It is in the Colline di Selvapiana e Canossa mountain cheese factory that Parmigiano Reggiano is made every day.

The Colline di Selvapiana e Canossa dairy was established by an agreement signet on 25 August 2011 between Colline di Canossa (wholly owned by Dalter Alimentari Spa) and Latteria Sociale Selvapiana

 

The cheese factory (registration number 417) previously named “Latteria Sociale Selvapiana” is located in Selvapiana (in the municipality of Canossa, Reggio Emilia), at an altitude of 500 m a.s.l., in an excellent position for Parmigiano Reggiano to age, thanks to the climate and environment. It began operating immediately after WWII, in 1945, as a small cooperative mountain dairy, and in almost 70 years in business, generations of cheesemakers succeeded one another, carrying on the tradition with the utmost respect for the age-old production methods.
