CERTIFIED QUALITY: BRC, IFS, ICEA and Mountain Product (Prodotto di montagna)
To guarantee maximum quality, the Colline di Selvapiana e Canossa dairy has always focused closely on improving the production technologies, while remaining compliant with the strict production regulations established and controlled by the Consortium and by the Parmigiano Reggiano Quality Control Department (DCQPR). Over the years, continual improvements have been made to the system for collecting the milk in tanks and for conserving it at the collection points and in the factory.
The Canossa dairy was one of the first to introduce “cooling” tanks, containing a cavity filled with cold water to keep the milk at a constant temperature for 10/12 hours during the night and thus avoid fermentation, especially in the summer.
In addition to the checks provided for by the Parmigiano Reggiano production regulations, weekly checks are also carried out to ensure the machinery is clean and the equipment in good condition. Analyses are carried out on the milk used and monitoring is carried out at the delicate curd-forming phase, the point at which the wheels are created, and which has a significant influence on the chances of the wheels being “chosen”.
The extraordinary qualities of the mountain milk, together with the skilful, painstaking production method, have earned the factory’s cheeses numerous awards over the years. In particular, the factory has obtained three important quality certifications for the high security and quality standards of its products:
– BRC (British Retail Consortium): level A
A food security standard that is essential in particular for operating on the British market.
– IFS (International Food Standard): Higher Level
Certifies the competence of companies in the food sector in terms of product quality and security.
– ICEA: for the production of organic Parmigiano Reggiano.
– Mountain product (Prodotto di montagna): used to classify food products originating from mountain areas in the European Union.
